The “Cross Cut” is a butcher term to denote the medallion that is created when cutting a sub-primal for the New York Striploin. This is the end cut so it is smaller in size and does not hold the traditional shape of a center cut New York Striploin but it holds the same bold flavor in a smaller piece and provides excellent value.
